The North American Association of Food Equipment Manufacturers, recommends 8 Ways to Protect Stainless Steel, or, more specifically, 8 ways to make sure you don’t break down the “passivity film shield” of your stainless equipment. Corrosion and rust come when that shield breaks down due to “scrapes, scratches, water deposits, or chlorides.”
