Fryer Hoods

As a stationary piece of equipment, hoods pose a challenge of how to clean vertically. There are many chemicals sold specifically for hood cleaning but they tend to be caustic and corrosive. Using a mild alkaline with a spray bottle or pressure washer will help maintain safe and clean hoods.

How To Clean:

  1. If possible, move the fryer away from the hood.
  2. Add 2/3 cup (150g) of detergent [for Detonox, use 2 cups (460g)] to 4 gal (15L) of warm water.
  3. Use with long-handled brushes, scrub pads, or a scraper if necessary to clean hood.
  4. If you want to use a spray bottle, add 2 tsp. (10g) of detergent [for Detonox, use 6 tsp. (30g)] to 1 qt (0.95L) of warm water and spray onto the surface. Let sit if grease is heavy.
  5. Rinse three times and dry thoroughly.

Additional Cleaning Tips:

There is a silicone caulk along interior seams. Be careful not to break this seal with scraper.
